Ingredients
- 500gfilet mignon
- 1chorizo or 80g sliced
- 1head of broccoli
- 500gcarrots
- 1clove garlic
- 3csoil
- 1Hungarian sweet paprika
Preparation tips
1. Preheat your oven to 180°C.
2. Cut the filet mignon into 1cm thick slices, but without going all the way through; they must all remain attached at the base. Salt, pepper and brush 1 tbsp of oil on the meat. Sprinkle with paprika.
3. Oil a baking dish or terrine and place the fillet delicately in the dish.
4. Cut the chorizo into slices and insert a slice between each slice of pork (if large slices, cut them in 2).
5. Bake the dish for 30-35min. Sprinkle the meat with the cooking juices during cooking.
6. Meanwhile, cut the broccoli into small florets and peel the carrots and cut them into strips.
7. Peel and chop the garlic.
8. Heat a large frying pan or sauté pan with 2 tbsp of oil. Add the chopped garlic and cook for 30 seconds.
9. Put the vegetables in the pan, add salt and pepper and if desired add a little paprika. Leave to sear for 1 minute. Reduce the heat and add a little water and continue cooking, covered, for 10 minutes, while the vegetables cook. Add a little water if necessary.
Adjust the seasoning and prolong the cooking if you like well-cooked vegetables.
10. Serve this fried vegetable with the chorizo-flavored fillet.
For those with a sweet tooth, you can add pieces of potato to the dish around the meat.
